
Getting the Crust Right: Why Speed Matters in Bread Ovens
If you’ve ever spent time in a commercial bakery, you know the struggle. Getting that perfect crust is a balancing act. You need heat that reacts now, not heat that takes five minutes to catch up. That’s why we use 110V shortwave infrared bulbs. Most ovens rely on heating the air around the bread, which is slow and clunky. These lamps are different. They send energy straight to the dough using radiation. It’s a completely different feel.
Why it reacts so fast
Here is the secret: the bulbs have very little “thermal mass.” Because the quartz envelope is thin and the tungsten filament is packed with power, they don’t need time to warm up. You flip the switch, and boom—they’re at temperature. In a busy oven, your controller might be clicking these lamps on and off every few seconds to keep the temperature exactly where it needs to be. Since the heat travels as light, it hits the bread instantly. You aren’t waiting for the whole oven cavity to “soak” in heat. It just happens.
Built for the grind
Constant switching is brutal on hardware. Most glass would just snap under that kind of stress—expanding and contracting over and over again. We use a specific grade of quartz glass that can take a beating. It handles those thermal shocks without cracking, so you aren’t replacing bulbs every other week. Plus, using 110V makes the wiring a lot less of a headache. It fits right into most standard kitchen setups, and you can wire them in parallel or series depending on how your power is laid out.
A few things to watch out for
Now, this speed is a superpower, but you have to handle it right. Shortwave IR is intense. If your lamps are too close to the bread, you’ll torch the crust before the inside is even warm. Positioning is everything here. You also have to tune your PID controller for this kind of speed. If you don’t, the oven will overshoot the target temperature before the system can react. It takes a little bit of tweaking, but once you nail it, the results are incredible.
