And that speed is what lets you hit those tight targets without guessing.
Why traditional heaters struggle
Here is the problem with standard heating elements: they have too much “lag.” By the time a traditional coil actually cools down, your bread is already overbaked. It’s frustrating. Our IR emitters fix that. We use a tungsten filament inside a halogen-filled quartz tube, which means the heat transfers almost instantly. You can flick the power on and off rapidly to keep things steady. No more “overshooting” the temperature and ruining a batch.

What happens in the real world
Now, a heads-up: IR emitters put out some serious, concentrated heat. Because they ramp up so quickly, they can be a bit much for some sensors. If your PID controller isn’t tuned for this kind of speed, the system will “hunt” for the right temperature, bouncing up and down. To stop the tops of your loaves from scorching, you’ll want to pair these lamps with fast-response thermocouples. The good news? These are basically drop-in replacements for most commercial lines. Just match your voltage and length, wire them in, and tweak your timers. You’re good to go.
