The practical details
Installation is straightforward, but clearance is the thing. The U-shape has to be mounted at the right distance from the hearth or tray line to hit the target temperature profile; get that wrong, and you’ll see uneven color again. Match voltage and connector type to your oven’s terminal block, and confirm compatibility with your thermostat or control system. Keep a spare on hand. Ceramic infrared heaters are durable, but high cycling and grease exposure in commercial kitchens still take a toll. Swap it in during a lull—your oven comes back to spec fast.
