Most convection ovens have a bit of a lag. They spend all their time heating up the air, and the air then has to heat the bread. In a high-volume bakery, that delay is a killer. It puts a hard ceiling on how many loaves you can push through per minute. We do things differently. We use shortwave infrared (IR) lamps to skip the middleman. Instead of waiting on the air, the energy goes straight into the dough. It lets you tighten up your production beat and crank out more product without having to build a bigger oven or take up more floor space. Heat that actually reacts Traditional heating elements are slow. IR lamps? They hit your target temperature in seconds. When you hook these up to a PID control loop, the system is basically psychic. If you speed up the belt and the temperature dips, the lamps react instantly. Because the heat flux is so concentrated, you can push the line faster and still get that perfect surface crust, even though the bread is spending less time under the heat. The nitty-gritty on the gear We usually go with halogen-filled quartz tubes. Glass just can’t handle the stress of rapid heating and cooling—it would crack. Plus, we use R7s or SK15 connectors because they stay put. The last thing you want on a vibrating assembly line is a loose connection. One thing to keep in mind is the wavelength. Shortwave IR digs deep into the product. Medium-wave is your go-to for that golden-brown color on top. Just a heads-up: if you’re running a high-power 400V array, that heat is intense. It can chew through your conveyor belt materials if you aren’t careful. You’ll want to shield your mechanical parts so you aren’t replacing belts every other week. Cutting the wait The best part? You can stop wasting time on long pre-heating phases. These lamps are a great drop-in replacement for those sluggish heating zones. By putting the heat exactly where it needs to be, you stop wasting energy and shave seconds off every unit. It’s pretty simple: more energy density means you can run your belts faster.
